Paneer Pasanda

Paneer Pasanda - Vidya Nayak Shenoy

Heat ghee n add 4 -5 cloves , green cardamoms garlic + ginger + slit green chillies n fry .. now add chopped onions n fry till translucent n add chopped tomatoes n fry till mushy.. now add the chopped carrot n lil water n cook till done.. when cool put in the blender n make a puree.. Heat ghee again add a tsp of kasuri methi , red chilli pd, lil garam masala , n roasted jeera pd... now add the masala puree n fry again .. adjust the thickness of the gravy by adding water.. now add lil sugar n salt and the cubed paneer n cook till done...
( Original recipe recommends adding cornflour or maida for the thickness .. but adding extra onion , tomato or carrot gives the required thickness..)
