Louki Kofta Curry

Louki Kofta Curry - Nutan Shenoy-Kini

Recipe:
Grate bottlegourd with skin if tender. Squeeze out water. Drain. Add salt. It wl gv out further water. Add gram flour n rice flour chilly pwdr n lil eno (depending on quantity).Make a bhajiya batter. Make balls. Deep fry n keep aside.

Chop onions. Saute till well browned with a bay leaf or 2. Add tomatoes. Saute till soft n mushy. Cool. Grind with ginger n garlic to a smooth paste. In a degchi, add lil oil. Saute the ground masala till raw smell of gg disappears. Add chilly pwdr kashmiri chilly pwdr haldi everest garam masala n salt. Dilute as per your requirement. Boil well. Put off gas. Pour the fried balls in a serving dish or kayli. Pour the gravy on top. Garnish with chopped coriander.

PS...nvr pour the fried balls in the gravy. It ll soak in all the gravy.

U cn mk it shahi by adding cashew bits raisins almonds n even lil paneer to the koftas. U cn add cashew paste n or fresh cream to the gravy too.
