Santa Delite - Shreela Sasidharan

Recipe:

Watermelon n pomegranate pearls in a creamy silky smooth yoghurt n fresh cream mildly sweet mixture.Garnished with Mixed fruit jam..
Watermelon wedge

3/4 cup fresh yoghurt chilled
1/4 cup fresh cream..from fridge not freezer
1tbsp powdered sugar
Mix all the above till well blended into a smooth uniform creamy mixture is obtained

1/2 cup Watermelon..cubes..abt 1 cm.
1/cup Pomegranate pearls.
Mixed fruit jam ...softened. .abt 2-3tsp

Assembling

Place watermelon cubes in serving dish .
Reserve few pcs for topping
Pour half the yoghurt / cream .do not mix.
Now sprinkle the pomegranate pearls all over this creamy layer.
Pour remaining half of the yoghurt/ cream mixture.

Garnish with the reserved watermelon cubes n pomegranate
Streak some softened mixed fruit jam on the top
Slit a watermelon wedge n fix onto the serving bowl.
Serve immediately.
