Pithagurir Payesh (rice souffle)

Pithagurir Payesh (rice souffle) - Sandhya Puranik

Recipe 
soak 1/2 cup aromatic rice like basmati or any local one for 2 hours ... wash and drain and dry on a cloth (i soaked the rice in the morning and dried till evening)... powder it in mixie .. i didnt make fine powder .kept it a bit grainy... mix this rice powder in 1/2 cup of milk and make a paste...boil 1 ltr milk ... when it coems to boil ..simmer and reduce a bit(i simered for 20-25 mins).. slowly add the rice paste stirring gradually and cook till the rice is cooked and the milk thickens... add sugar as req and lemon rind of 1 big lemon... cook for few mins and switch off... cool completely and add 1/4 cup more or less of cream.. and chill .. tasted heavenly . cream can be avoided and the powder part can be done on the previous day ..but the main imp ingredient lemon rind should not be left out..i.e what gives this dish its unique
