Bitter gourd stir fry - Madhukantha Kamath
1. Wash n chop bitter gourds into circles or tyre like rounds, deseed , cut into half circles. Add 2 tsps salt ,mix n let it sit for a couple of hrs / overnight / all day .
2. Squeeze out the bitter water..
3. Heat 2 tsps of coconut oil in a pan add crushed garlic cloves with skins on n fry them . Tear 2 dry red chillies into bits and add . Slit 2 green chillies and add them. Add the squeezed karela pieces n fry in the oil for 2 minutes .
4. Add some water a small piece of jaggery and tamarind pulp n cook covered till soft. (Check salt as you are using once salted n drained veggies u need to moderate use in pan at cooking time. )My fav . You can call me a fan of karela .
note u can add mango pieces or bimbul instead of tamarind . happy cooking amita . let me know how it turned out
