Dhaaba Style Egg Curry

Dhaaba Style Egg Curry - Tanushree Aich

Ingredients
2 boiled eggs
1 large onion pureed
2 medium tomatoes boiled & pureed
Whole garam masala ( tej patta, elaichi, dalchini, lavang & kali mirch)
Kashmiri chilly pwdr
Turmeric pwdr
Dhania- jeera pwdr
1 tbspn ginger garlic paste
Pinch garam masala
Oil
Salt to taste
Coriander leaves to garnish
Pinch sugar

Method
In a wok heat oil, saute the whole eggs till lightly fried, keep aside
Add the whole garam masalas
When they leave an aroma add the onion paste, saute till browned n rawness goes
Add gg paste, stir till aromatic
Add the ground masalas one by one
Saute n cook till the mixture leaves oil, if u notice that the masala is getting burnt add a lil water
Once the masalas are cooked well add the tonato puree( skinned & deseeded boiled tomatoes)
Cook with lid till the masalas blend well, add pinch sugar, salt n cook on a low flame
Add the eggs ( either whole or halved) cook till eggs are coated well n gravy thickens
Add a tbspn ghee( optional) sprinkle garam masala pwder, n garnish with chopped coriander leaves
