Aappam

Aappam - Sarita Bhat


( Kerala dosa,in my way)
Raw Rice...21/2 cup
Leftover cooked Rice 1 cup
Coconut gratings 1cup
Coconut or Tender coconut water 1cup
Sugar 1tsp
& Salt to taste
Aappam kadai
Lil oil.
Method:
1Take coconut water in to a bowl,Add tsp of Sugar & Take a one boil.And keep this for fermanting atlest 7 hours.
2.Soak the Rice atleast 3 hours.Later grind with cooked Rice,coconut gratings,Fermanted coconut water,Grind to a fine paste.Add appropriate water,and batter should not be too thick & not too thin.And keep this batter for overnight atleast 8 to 10 hours.If good ferment that means good Dosa.
3.Next day morning add salt to taste,mix it well.If batter is thick add lil water.
4 Take out the Aappam ,you need NONSTICK AAPPAM KADAI .It come out very well.
5.Heat aappam kadai on medium heat ,pour 11/2 laddle of batter Hold the both hand of the kadai & turn whole kadai one round,Batter spread evenly on kadai.Cover the lid,flame should be medium.when you can see the side of the aappam came golden colour & crispy then take out from kadai ,This will come out very easily.No need any spatula.serve hot with ,Chutny,Veg stew,Chicken curry or mutton.

Simple Dosa

Simple Dosa - Suresh Sawant

It's my styled preparation
Dosa Stuffing preparation
Onion 2 med med sliced
Green Chillies finely chopped 3/4
Green coriander chopped
Chat Masala as per taste
Salt as per taste
Mix all above items

Lal Chutney
Red chillies 2 / 3
Kashmiri red chillies 2 / 3
Dry grated coconut 1 cup or as req
Roasted peanuts qtr cup
Tamarind pulp 1 tspoon or as req
Garlic flakes 7 / 8
Salt as per taste
In a kadhai roast dry coconut on low flame till become golden brown. Transfer
to other plate. Add red chillies and roast same way. When cooled add tamrind peanuts salt and raw garlic flakes and grind to a rough chutney consistency. Your Lal chutney is ready to serve
Dosa batter 3 / 4 cups
Turmeric Powder pinch of
Salt as per taste
Oil 2 t spoons
Water as required. Mix all above items and your dosa batter is ready.

Preparation for Dosa Batter

Rice 2 cups
Urad dal 1 cup
Fenugreek / Methi Seeds 1 t spoon
All above items soaked in water separately for 4 / 5 hours
Then together grinded to a Fine paste.
Keep the batter to ferment it for 7 / 8 hours.
Now the batter is ready for.

Preparation of Dosa

Heat dosa tawa and apply little oil.
Take one small onion cut it slightly from one side and brush it on tawa. This way batter will not stick to dosa tawa .Put gas on medium.Now spread dosa batter as usual all over tawa . Spread little oil all over it. Spread Lal chutney all over it.Now add onion mix and slightly press it. Wait till it becomes ready or till the colour becomes slightly brown Then fold it in a round shape .
Transfer the ready dosa to a serving plate and serve with chutney sambhar or as per choice
.

Masala Dosa

Dosa Bhaji preparation

I have taken Green chillies instead of masala powders here
Potatoes 2/3 big boiled and smashed into pieces.
Onion 2 med med sliced
Ggarlic crush 2 t spoons
Green Chillies finely chopped 3/4 or as liked
Curry leaves few
Urad dal 1 t spoon
Coriander Powder 1 t spoon
Turmeric Powder little
Tomato 1big chopped
Green Corriander chopped
Cumin seeds 1 t spoon
Salt as per taste
Now in kadhai add oil and heat it
Add mustard seeds urad dal and let the dal become slight brown then add cumin seeds Ggarlic crush green chillies curry leaves and wait a little. Then add onions and saute for 2 minutes .Add potatoes turmeric powder and saute for 2 minutes. Add coriander powder salt tomato and mix well. Again saute for 2 minutes .Put gas on sim and cover the kadhai. Let it be cooked till done.
Just check in between .When done Garnish with green Corriander.
Your Dosa Bhaji is ready for stuffiing.

Preparation for Dosa batter

Spread little oil alover it. Wait till it becomes ready or till the colour becomes slightly brown. Now put dosa bhaji at one end and fold dosa in a round shape .
Transfer the ready dosa to a serving plate and serve with chutney sambar or as per choice.

Recipe : 
Slightly fried garlic in heated oil, added spinach and sauted it till it got mushy. Then blended it with half cup of dosa rice, salt to taste, red chilli powder, one small boiled potato with little water and added this thick mixture to left over dosa batter. Took dosa by sprinkling onions on the top and cooking both sides

Recipe
Soak 1/2 cup Urid daal for 1/2 hr.. n grind to a fine batter.. leave to ferment for 6 - 7 hrs..

Next day..In a separate vessel mix in 1/2 cup whole wheat atta + ( chiroti rawa + rice atta+ oats.) measuring to 1/2 cup.. mix this with the urid batter add salt n 1 tsp sugar , grated masala of 2 tsp coconut + ginger + green chillies .. mix well.. now prepare dosas...

Oats Uttappam

Oats Uttappam - Laxmi Bhandary

For batter
1cup quaker (100 gm) oats,1/2 cup semolina (soji) 1/2 tsp baking soda, salt to taste and 1 cup water

For toppings :
grated carrots, chopped onions, chopped green chillies, chopped coriander n curry leaves.

Method-
mix all the ingredients to get thick pouring consistency. Keep batter aside for 1/2 an hour.And then pour 1 ladle on non stick pan.Spread slightly thick and sprinkles toppings.Press lightly with a spoon to set.Cook till both sides are crisp and golden.

Recipe :
  • In a readymade Dosa batter added Rava for crunchyness, Fine Chopped Onions, Fine Chopped Green Chillis and Fine Chopped fresh Coriander. On a non stick tava with few drops of oil made made it nice and brown.

Recipe : 
  • 1 cup plain Oats Add 2 tbsp. each of Dahi and Besan, grind it in mixer to have a Uttapa batter consistancy. Add fine chopped Onion, Green Chillies, Salt and fresh Corander. 
  • On non stick pan make small or any size of Uttapa as you wish, greasing the Pan lightly. Cook nicely from both sides. Oats Uttapa ready to eat.

Recipe : 
  • In a bowl take 2 tbsp of Rava and to make it crisp add 1 tbsp of Rice Flour, Add Fine Chopped Onion- Green Chillis-Fresh Coriander and 1/2 tsp Ajwain and Salt to taste. 
  • Mix everything by adding water and make it thin batter. Keep it for 10 min for Rava to absorb water and become little soft. Now on Non- Stick Tawa spread coconut oil and spread the batter in round shape adjusting the mixture. 
  • Roast it from both the sides till Golden Brown and Your Simple Zatpat Garma Garam Rava Uttapa is Ready. I had it with Mulgapuddi Powder (Readymade From Gokul) adding Ghee.

Recipe :
Ingredients :
  • 1 cup sago ( washed well & soak for abt 3 hrs in water just enough to immerse the sago)
  • 1 cup bombay rava ( not very fine)
  • Half cup curd ( beat it well with little water)
  • Chopped green chillies
  • Grated ginger
  • Chopped coriander leaves
  • Cumin seeds
  • Salt
Method
  • Soak sago in water for an hr, the sago will soak up all the water, coarsely grind with very little water
  • Add rava, curds & water to give a thalipeeth consistency ( not very thick or thin, should b easy to spread with fingers)
  • Add a tempering of cumin seeds, chopped chillies, to the batter
  • Add chopped coriander, grated ginger, adjust salt
  • Heat griddle drizzle some oil, place a lump of the batter on it
  • Spread with fingers ( neither too thick or thin )
  • Let it brown well, then flip over & roast the other side too
  • Repeat the process for the rest of the thalipeeths ...
  • Serve with raita or a dollop of butter!!

Note : To add nutrition value roasted peanut pwdr can be added too, authentic thalipeeth recipe normally calls for mashed potatoes instead of rava, u could try that version too

Recipe :
  • Take 1 cup ragi flour, 1 cup wheat flour, 1/2 cup maize flour, 1/2 cup rice flour, 1/2 cup maida ( optional) n 1cup semolina (med rava) ..Mix well.
  • Now to this add 1 1/2 cup buttermilk and required amt of water to get batter consistency of Panpolo ( Neer dosa). While mixing use Whisk to avoid any lumps.
  • Now add finely chopped 1 or 2 onions, 2-4 green chillies n chopped coriander leaves, little jeera powder,salt.
  • On non stick tawa spread the batter,as v do with panpolo, sprinkle oil, wait till underside bcm brown , flip , fry both sides to get crispy dosas.. Have this with coriander leaves chutney..

Recipe :
Ingredients :
  • Thin rava- 2Tbsp, 
  • Rice flour- 1 cup, 
  • Maida-1 tbsp, 
  • Onion-2, 
  • Green chillies-6, 
  • Ginger-small piece, 
  • Curds-1 cup, 
  • Curry leaves
  • oil and salt.
Method :
  • Mix rava, rice flour, maida, onion pieces,, g.chillies, curry leaves, ginger along with curds, salt, & water let the batter be a little thin watery consistency, pour the batter on a Tawa from a little ht.so that u can see the pores on the dosa, put.oil on the sides &cover the lid, allow it to be a bit crispy.

Recipe :
  • Grind coarsely Sprouted Moong, Giger, Garlic, Green Chillies and Fresh Coriander.In a mixture add fine chopped Onion and salt to taste. 
  • On a non-stick tava with few drops of oil,make small pan cakes. Make them brown from both sides so that they are cooked well. Your Moong Ka Uttapa are ready to serve. 
  • Serve hot with Green Chatni or Tomato Ketchup. Its very healthy.

Recipe :
  • 1 cup urad dal
  • 1 cup chana dal
  • Small piece of. Hopped ginger
Method :
  • Wash dals and soak together form3 hour. Grind all to a smooth paste. 
  • Then in a small gundi kayli, heat oil, when warm add sasam, karibev and pour batter. Add some more oil or ghee and cover and cook till the bottom is crispy. 
  • Turn and fry other side on low to medium flame till nice and crispy. You will simply love this doddak. Try, enjoy!

Recipe : 

  • Overnight Saboodana to be soaked. 
  • Take soaked Saboodana add Roasted crushed Peanuts, Rajgeera Atta, Roasted Jeera, Jeera Powder,Salt to taste, Fine chopped Green Chillies & Fresh Coriander. 
  • Add little water for consistancy like Uttapa. Make small Uttapas (Pan Cakes) on non stick Tava with little oil. 
  • Cook them well from both the sides. These Uttapas are delicate and are soft but amezing in taste. You can serve with Green Chatni, Curds or Tomato Ketchup.
