Chicken Soup
Chicken Soup - Suresh Sawant
It's a my styled preparation
Chicken with bones around half kg
Onion 1 big chopped marinated with salt and turmeric powder for half an hour.
Ginger grated 1 t spoon
Garlic crush 1 t spoon
Tomato 1 medium chopped
Green coriander chopped
Whole spices like
Cardamom 2 / 3
Bay leaf 2
Cinnamon stick 1 medium
Black peeper 6 / 7
Cloves 2 / 3
Oil 2 t spoons
Fresh Butter 1 t spoon
Salt as per taste
Red chilly Powder 2 t spoons or as req
Coriander cumin powder 1 t spoon
In a pressure cooker add oil and heat it
Add whole spices and wait a little
Add chopped onion and saute till become soft. Add Ggarlic crush n saute for 2 minutes .
Add tomato and saute till become soft
Add chicken pcs and saute for 2 / 3 minutes.
Add cumin coriander powder red chilly powder turmeric powder salt and mix well . Again saute for 2 minutes. Add water as required and pressure cook it for 5 / 6 whistles.
When done transfer to a serving bowl.
Add little butter and garnish with green coriander. Your Chicken Soup is ready to serve

Creamy Sweet Corn Egg Drop Soup
Creamy Sweet Corn Egg Drop Soup - Tanushree Aich
Ingredients
Chicken stock 2 cups
Sweet corn, boiled & roughly chopped 1 cup
Carrots & french beans chopped 1/4th cup
Coarsely ground peppercorns
1 egg white
Spring onion greens 1/4th cup
Cornflour slurry
Procedure
For the chicken stock pressure cook a few chicken pieces, sliced spring onion whites, some parsley, a few peppercorns, cloves, a bay leaf, water & salt
Cool, remove the spices & chicken pieces & puree
Freeze & store as cubes
For the soup
Add a blob of butter in a wok
Saute the carrots & beans for 2 mins
Add in the boiled corn & the chicken stock
Let it simmer, add the cornflour slurry to get the desired consistency
Switch off gas & drop in the egg white in a stream stirring the soup
Lastly garnish with freshly ground pepper & spring onion greens

Sugarfree Sagoo Avocado Pudding
Sugarfree Sagoo Avocado Pudding - Vidya Pai
Make a thick kheer using sago, milk n sugar. Cool. Pour in serving bowls of your choice. Refrigerate for setting. Once it sets, puree avocado / papaya with little sugar. Add milk for avocado. No need of adding milk for papaya. Pour it on the set sago kheer. Allow it to set in refrigerator. Your sago-avocado/papaya pudding is ready to be served once it sets. Serve chilled.

1½ cups Ripe Papaya, peeled, seeded and chopped
1/2 Frozen Banana, sliced
1 cup Low Fat Milk
1/2 cup Organic Yogurt (Plain or Vanilla)
3 teaspoons Sugar
1/2 cup Crushed Ice
Directions:
Blend papaya, banana, milk, yogurt, sugar and crushed ice in a blender or food processor until smooth puree.
Check thickness of the slushy drink. If required, add additional milk to reduce the thickness and blend again for 15 seconds.
Pour it in chilled serving glasses and serve.

Pumpkin Soup

Ingredients :
- 1kg pumpkin peeled, deseeded & chopped
- 1 potato peeled & cubed
- 2 onions chopped.
- 2 cloves of garlic chopped.
- 4Tbsps of oil
- salt & pepper as per taste.
- Heat 2tbsp of oil in a pan. Add chopped onions to this & gently fry till they become soft. ( shudnt be brown) add chopped garlic pieces & fry for a while. now add chopped pumpkin pieces & potato cubes. stir for few mins. then add water or vegetable stock . mix well. close the lid & allow to cook for about 10 to 15mins.
- Season with salt & pepper & boil for few mins.
- Puree this with hand blender. Mixer can also be used .
- Cut the wholemeal bread into small croutons. Heat the remaining oil 2tbsp in a pan & fry the bread pieces until it starts to become crisp.
- Serve this yummy soup with fried bread pieces.

- 3 boiled potatoes
- 1 cup chopped spinach
- 2 green chillies slit
- 1 tsp urad dal
- 1 tsp channa dal
- 1/2 tsp mustard
- 3 cups yogurt
- Salt to taste
- Handfull of corriander and curry leaves chopped
- Cut the boiled potatoes .Add salt and keep.it aside.Heat 2 tsp oil.Add channa dal,urad dal .Once they turn slightly brown add mustard seeds.
- Add green chilli,spinach,corriander and curry leaves.Saute for a minute.Switch off the flame.
- Add yougurt to the boiled potatoes.Garnish with tadka .Mix and serve.
- Cooling for summer.

Cream of broccoli & burnt garlic soup

Recipe :
- In a wok, add 3 tbsp butter & some olive oil, add in sliced garlic cloves, brown them well ( atleast 9-10 cloves). Reserve a few for garnishing
- In the same wok add spring onion whites, saute till they wilt
- Add in peeled n cubed potatoes, saute for abt 5 mins,
- Add in broccoli florets ( washed n immersed in salt water pre cooking)
- Saute for abt 10 mins, add in 3 cups vegetable stock
- Add in 2-3 tbspns oats
- Let it pressure cook till veggies r cooked
- Cool & blend in a mixer
- In the same wok, add a little butter , add the pureed broccoli potato mixture
- Add 1/4 th cup milk & abt 2 tbsp cream
- Simmer , add salt & pepper
- Lastly garnish with burnt garlic pieces pre serving!!

Minty Mango

- Pressure cook 1 whole raw mango.
- Peel off the skin n take out the pulp. Now take 2 fistful mint leaves, 1/2 tsp salt 1 tsp cumin seeds n 2 tblspoon sugar.
- Blend all the ingridients along with mango pulp into a smooth paste.. Take out in a vessel add 2 to 3 cups of chilled water.
- Mix well,and serve, adjust the ingridients as per ur taste, u can substitute sugar n cumin seeds with jaggery n cardmom powder.

Papaya pomegranate n grapes cooler
Papaya pomegranate n grapes cooler - Shreela Sasidharan
Ingredients
Papaya ripe ..1/2 cup
Pomegranate. ..1 med
Grapes green...1/ cup
Honey 1tbsp
Mint leaves
1 tsp of lemon juice
Method
Deskin papayas , chop n puree with honey n abt 2 to 3 tsp of chill water ..Grapes...seedless. .wash puree along .strain
Make paste of few mint leaves n lemon juice..
Mix with grape juicePomegranate .deseed ..pulse in mixture .Strain
Chill all the 3
Remove from fridge just prior to Assembling n serving
Assembling
I serving glass..first pour in the papaya mix
Next using a spoon ..pour gently the grape mint n lemon mix gently over the back of spoon..at one edge
Lastly ..in the same way pour in the pomegranate juice.
Garnish with a slice of papaya , sliced Green grape n sprig of mint leaves.
