Spicy Kheema stuffed cabbage rolls!

Spicy Kheema Stuffed Cabbage Rolls - Tanushree Aich

Chicken/ mutton kheema
Mashed peas
Chopped onions
Chopped green chillies
Ginger garlic paste
Red chilly pwdr
Turmeric pwdr
Cumin pwdr
Garam masala
Spring onion greens chopped

For the rolls
4-5 cabbage leaves
Boiling hot salt water
Spring onion greens to tie the rolls

Place the leaves in boiling hot salt water till they wilt
Trim the thick mid rib so that they can b rolled easily. Keep aside
In a wok add oil, saute onions, add gg paste, add chopped green chillies
Add in the kheema, u cud use mixed finely chopped veggies, scrambled eggs, paneer, mushroom, cheese as an alternative
Saute n add the spice pwdr
Sprinkle some water n cook with lid on for 5 mins till kheema is cooked
Adjust salt n add the mashed peas n spring onion greens
Take a spoonful of the mixture n fill into the cabbage leaves n roll
Tie these with the spring onion greens
Steam in a steamer for 10-15 mins... Serve hot with Szechuan sauce or a dip of ur choice

I used left over dry kheema..stuffed in slightly wet bread slice...pressed bit with palms.then shallow fried on low flame..It tastes yumm..try it.you can use any veges..or left over sukka bhaji stuffing..these rolls r best for breakfast...u don't require much oil..

Chicken Spring Rolls

Chicken Spring Rolls - Devika Pai

INGREDIENTS 
Ingredients for the Filling : 200 g - chicken, boiled and shredded 50 g - carrot, grated 25 g - capsicum, thinly sliced 100 g - onion, thinly sliced 3 - green chillies, chopped 6 flakes - garlic, chopped 1 tsp - ginger, chopped 1 tsp - soya sauce 2 pinches - black pepper powder 2-3 tbsp - refined oil A pinch of Ajinomoto Salt to taste Oil for deep frying Ingredients for the Pancake : 1 cup - Maida 2 cups - Corn flour 1- Egg 3 cups - water Salt, a pinch or more accordingly. 

METHOD
Method for Pancake:
Combine all the ingredients for the pancake and set aside for about 30 mins. In the meantime prepare the filling for the rolls.
Method for the Filling:
Heat oil, add ginger and garlic and saute till it gives an aroma, add chilly and onion and fry on sim till transparent. Add the carrot and capsicum and cook on sim for about 5-7 mins, add the boiled and shredded chicken and mix well, add salt, soya sauce, pepper and ajinomoto. Mix well and remove the filling from heat and let it cool.
To Prepare the Pancake :
Lightly grease a non - stick pan and pour a ladle of batter and prepare thin round pancakes and set aside to cool.
To Assemble the Rolls :
Take a pancake and place about 1 tbsp of filling in the centre, fold the sides of the pancake and bring it to the centre, then roll it up securely in the shape of a roll. Seal the end with a little maida paste. (About 2 tbsp maida mixed with enough water to make a thick paste for sealing the end). Deep fry the rolls and serve hot with tomato ketchup.

Recipe:
For the filling i fried golden crispy tempura chicken nuggets n made a stirfry with garlic chops onions capsicum n sauces like soy.. chilly garlic... ketchup ..n chilly paste .. added cut nuggets spring onions coriander leaves n stirfried . Then .. rolled out thin rotis ...fried on tava putting oil n 1 tsp beaten egg on inside portion. Flip over ..cook ..put filling in the middle ...make rolls n serve chilly frankies.

Chapathi Egg Roll

Chapathi Egg Roll  -  Poornima Porchelvan

Ingredients:
Chapathi - 1 (Home made or store bought)
Eggs - 1
Pepper powder - ½ tsp
Salt - to taste
Tomato Ketchup - to apply on chapathi
Oil - 1 tsp


Directions:
Prepare chapathis (required numbers) and keep aside.
Beat the eggs with salt and pepper and keep aside.
Heat a Tawa / Pan, pour the egg mixture and prepare omelette in the size of chapathi. Add oil and allow to cook. Keep aside.
Place the egg omelette over the chapathi and roll tightly from one side till the end leaving little space.
Apply little egg mixture before completing the roll for better seal.
Again place the chapathi in the pan,with the sealed edge facing down. Allow to cook for a second.
Cut each roll diagonally into two pieces and serve.

Note:
Mayonnaise can be used along with tomato ketchup for better taste.For crunchiness and more spice, you may add chopped onion, capsicum green chillies to egg mixture while preparing the omelette.

Chicken Shawarma Rolls

Method:- 

Finely slice 4 onion, 1 tomato, lettuce any any pickled vegetables of your choice(optional) , keep aside, marinate 800 grams bone in chicken for about 6-7 wraps in good helping of garlic powder, 1 table spoon cinnamon powder, shawarma spices powder(can skip if unavailable ) , plenty of lemon juice , salt (keep overnight minimum can be marinated for even 24-36 hrs in refrigerator ) grill for 30 mins at 180 degrees pre heated oven , debone n save for further use. On a flat bread (khoobus (lebnese bread available easily in gulf)/ chapati/ soft roti/roomali roti), spread garlic mayoneese (egg yoke blend with garlic paste n impulsive with one cup oil /can use ready made mayo n garlic powder in combination) put the chopped ingredients in a line then the shredded chicken pieces , few french fries /curly fries (fresh or frozen made as per packet instruction ) , sprinkle salt n drizzle tahini paste ( readily available in super markets/or use till paste ground in olive oil)n close wraps. Serve
