Mango cake

Mango cake - Kiranmayi Kamath

Recipe : 

Maida-1 1/4 cup,
baking powder-1 tsp,
Baking Soda-1/2 tsp, 
pinch of salt.
Cashew nuts-1/2 cup, 
Sugar-1/2 cup(heaped),
2 cardamoms (peeled), 
4 tablespoons Refined oil, 
2 tablespoons Fresh Cream ( I used Amul), 
2 tablespoons milk and 1 cup Mango pulp. 
1/4 cup choco chips can be added last to the
batter...they look very cute in the cake when sliced!!

Sieve all the dry powders and set aside.
In Mixie jar: grind 1/2 cup cashewnut pieces to a coarse texture and remove. Same jar add 1/2 cup Sugar (heaped) and powder fine with 2 or 3 cardamoms ( peeled).
Add Mango pulp to the powdered sugar in the jar and now run the "PULSE" button briskly for a about 4 times.
Now add oil ( any cooking oil can be used) and Pulse again twice.
Last add the Cream and pulse again to get a smooth cake batter.
Pour the batter into a mixing bowl. Fold in Maida little by little and if the batter is too thick add the 2 tablespoons of milk.
Pour the contents into a greased cake-tin and bake.
Bake in Oven at 180* degrees C for 40 minutes.

Mix 1.5 cup all purpose flour 
1 cup mashed banana 
3/4 cup sugar 
1/4 cup milk 
4 tbsp chocolate pwdr 
1 stick butter 
3/4 tsp baking pwdr 
1/2tsp baking soda. 
Microwave the mixture for 8- 10 min.

Simple Eggless Sponge Cake

Simple Eggless Sponge Cake - Yogita Kamath

Maida - 1/2 cup + 6 tbsp
Sugar - 6 tabs or u can increase or decrease the amount on sugar as per your taste
Milk powder - 50 gms
Oil - 1/4 cup + 1/2 tbsp
B.S - 1/2 tsp
B.P - 1 tsp
Curd - 1/4 cup
Milk - 1/4 cup
Water - 1/4 cup
Cashew - 1/4 cup tossed with some maida
Vinegar - 1/2 tbsp
Take 3 bowl
In first mix together milk, curd and water mix really well
In second sieve together flour, milk powder, B.S and B.P and sieve for 2 to 3 times. Pls do not skip this
In third mix oil, sugar, essence and vinegar
Now to the sugar and oil mixture add half of the flour mixture and full of milk - curd mixture fold in gently .
Now add remaining flour mixture and fold in gently .
Bake it in ur desired pan @ 180° till the time its cooked properly. Mine it took 25 mins

Fruit Cake

Fruit cake - Viraja Bhandarkar Aruna Acharya

Egg-4
Maida-200gms
Butter-200gms
Sugar- 200gms
Baking powder -1 tsp
Salt-pinch
Masala powder[ nutmeg, dalchini] -1/2 tsp
Vanilla essence-1tsp
Tutti fruity,badam cashew,raisins -200gms
Caramel-2 tbsp
Instant coffee-1tsp


Method :
Clean , cut & put all tutti fruity & dry fruits in a bowl with masala powder & soak in juice of 1 lemon . this should b made previous night of baking the cake!

Cream butter, sugar.
Beat eggs with vanilla essence in separate bowl.
Add beaten egg to the creamed mixture little by little beating throughout.
Sieve flour, salt & BP thrice.
Mix fruits & flour together & keep aside. otherwise the fruits will sink down.
Add the flour & fruits mixture gradually to the creamed mixture & mix with plate knife.
Add caramel & coffee. Mix well. Put in prepared Tin & bake at 150 degree for1 hour

Orange Choco Sponge Cake

Orange Choco Sponge Cake - Aishwarya Kamath

Recipe -
1 Cup Maida
1 Cup Powdered Sugar
1 Tsp Baking Powder
2 Tbsp Coco Powder
3 Tbsp Soft Butter
1/2 Cup Raisins
1 Small Tetra Pack Orange Juice.
1 Butter Paper
Few orange zest/rind

Method:
- Mix all the above said ingrdients into a bowl with the help of spatula or else with the electric beater.
- Now pre heat the oven for 5 mins at 160 degree celcius.
- Now Grease the cake tin with Butter or else surround the cake tin with the Butter Paper.
- Transfer the cake batter into the cake tin and tap it 2 twice very slowly so that no air bubbles are there.
- Now Put the cake tin into the oven and bake it for 40 mins at 140 degree celcius.
- Let the cake cool down & later demould it.
- Garnish it with some Orange zest.
- Orange Choco Sponge Cake is ready to be served.

Moist Lemon or Orange Cake

* THE CAKE BATTER
* 175 g, 3/4 cup softened butter
* 175 ml, 3/4 cup milk
* 290g, 1 1/2 cups regular sugar
* 3 eggs (lightly beaten)
* zest of 1 lemon (or 1 orange)
* juice of 1 lemon (or 1/2 orange)
* 226g, 1 3/4 cups Plain / All purpose flour (sieved)
* 1 tsp baking powder
* 1/2 tsp salt
* The Syrup: 
(optional but gives the cake an extra hit of orange or lemon)
* 1 Tablespoons regular sugar (you can reduce amount if you don't want it too sweet)
* 1 1/2 tablespoons warm water
* zest of 1 lemon (or 1 orange)
* juice of 1 lemon (or 1/2 orange)

Instructions
1. Heat oven to 160C, Gas 3, 300F. Grease and line your baking tin.
2. ** Please note, if using a Bundt tin, be sure to grease it very well as it can be hard to get the cake out of such a shaped tin.
3. Get all your ingredients ready, i.e zest and juice the lemon / orange, sieve the flour, and add the salt and baking powder to the flour etc.
4. Start with making the cake batter by creaming the butter and sugar until a pale light colour.
5. Slowly add the beaten eggs to the mixer, on a low speed setting, a bit at a time. If the mixture starts to curdle or split, add a spoonful of your sieved flour, keep on adding the eggs, and a bit of flour if necessary, until all the eggs are added.
6. Add half the milk with half of the flour, keeping the mixer on a slow speed. Once combined, add the lemon / orange juice, and zest, the rest of the milk and flour.
7. Transfer the cake mixture to the greased and lined loaf tin. Drop it from a 3 cm height onto the work surface to level it out, then place in the oven for 1hr and 20 minutes. ***** Please note, if using a Bundt tin, cook time is 1 Hour 10 minutes.
8. Have a cup of tea!
9. Now make the syrup by adding all the ingredients to a small saucepan, (or use a bowl and microwave for 1 -2 minutes) heat through until the sugar is dissolved. Put aside.
10. When the cake is done, take it out of the oven and leave in the cake tin until cool. Using a skewer, prick holes all over the top of the cake, pushing the skewer through to the bottom of the cake. Gently pour the syrup mixture all over the surface of the cake, distributing evenly. The liquid will be quickly absorbed by the cake. The syrup will keep the cake moist and also give it a nice glossy shine, with sprinklings of zest on the top. If you think there is too much syrup for your cake, don't use all of it. Often it will depend on the size of your cake, how much it has risen, what size loaf pan you have used. I used a large loaf pan, so needed all the syrup.

Recipe
11/2 cup wheat flour
3/4 tsp baking powder
3/4 tsp baking soda
A pinch of salt
11/2 cup orange juice
3/4 cup jaggery
3/4 cup butter
3/4 tsp orange zest
11/2 tsp eggless custard powder (vanilla)

Preheat oven to 180 degrees. Sieve together custard powder n wheat flour with baking powder n baking soda. Keep this mixture aside. Mix the butter n jaggery n blend well. Add orange juice n beat well. Add the sieved flour n orange zest n beat well, ensuring that there are no lumps in the batter. Grease a baking tray n pour the batter into tap. Tap from both sides to remove air bubbles n place in oven for 35 minutes.

Recipe
Blend a cup of peanut butter with a cup of castor sugar n an egg. Don't blend too much. The mixtures leaves out lot of oil. The mixture looks like rough chapati dough. Just give one soft knead. Make balls. Flatten. Put criss cross with fork. Mw for 20 secs. Stop. Another 20 stop. Last 20, stop. Total one min, but nt at a tym. Divided doses. Dats my r&d. Allow standing time. Once it's lukewarm, place choco chips on top n sides. Njoi. Happy baking.

Tutty Fruity Cake

Recipe
For 200 gms maida, I took 1 tsp baking powder, mixed it well. Added 200 grams amul butter at room temp n blended with hand blender. Added a total of 4 eggs, one at a time, blending well in one direction only till frothy. Then added 2 tsp vanilla essence n 200 grams castor sugar n blended the mixture well to a ssss texture. I always coat the tutty fruity with maida, well enough for at least 15 min, then add them to the batter n blend. They don't come to the surface but spread evenly in the cake. After this, I bake it in an oven. Today my oven refused to work n last Friday of the month shops r closed. I was helpless. I poured salt crystals in the cooker, kept the grid on it n placed the cooker to heat.Greased a loaf mould n placed it in the cooker on hi for 20 mins without whistle n on sim fr 50 min thereafter, n lo n behold, I had the fluffiest tutty fruity cake on my hands.

Beat the contents of a full nutella can. Add 3 eggs one by one n blend. Take the same nutella tin full of maida with 1 more tbsp of maida n blend. Add 1 tbsp castor sugar, blend contents well. Grease a loaf tray n bake till done.

Ingredients
Whole wheat flour- 1cup
Butter-110gms
Baking powder-l spoon
Milk maid-400gms
Milk-1/4cup
Almonds_10 -12 crushed into small pieces
Vanilla essence_1 tsp

Method-
Melt butter in a vessel.put the flour n baking powder. Blend it with a blender. Add milkmaid and again mix it.add the milk blend it properly. Now add the almonds n vanilla essence n mix with a spoon.greese a round aluminum tin(don't use steel) ,pour the batter into it.now set the cooker.put crystal salt in the bottom of the cooker,keep one cooker plate(the one with holes) ,keep the vessel on that.heat on high flame for 3mins.then on low flame for30 to 35 mins.check it with toothpick to confirm it.take it out when it is cooked, allow to cool.turn it upside down on a plate. Cake is ready.
For chocolate syrup( u can use ready made or can make it at home)
2tbs cocoa powder, little water, 4 tbs sugar .mix all n boil it in a pan,till it becomes thick.apply this syrup on the top of the cake!!

Banana Muffins

Ingredients :
Whole wheat flour - ½ cup
Baking powder - 1 tsp
Baking soda - ½ tsp
Cooking oil - 5 tbsp (I used sunflower oil, olive oil will be best option for healthy version )
Milk - 3 tbsp
Honey - 3 tbsp
Cinnamon powder - ½ tsp
Vanilla extract - ½ tsp
Bananas (ripe and mashed) - 2 small
Egg - 1
Salt a pinch
Sugar to sprinkle

Method :

Preheat oven to 150° C and grease muffin tin with oil. (I used silicon mould so greasing was not required)
In a bowl beat egg, oil, vanilla extract, milk and honey together.
Sift in flour, baking powder, baking soda, cinnamon powder and salt. Mix it with wet ingredients. Add mashed bananas and mix well.
Pour batter into the moulds and sprinkle sugar over it.
Bake for about 20-25 minutes. Remove from oven and cool for 10 minutes..
Muffins are ready to serve.

2 cups of flour
1.5 tsp baking soda
1.5 tsp salt
1 cup sugar
1/4 cup oil
4 mashed bananas(short)
1/4 cup water
1 tsp vanilla essence

mix all n beat to smooth mxture.. keep aside for 1 hr.
grease pan.. pre heat for 350°f
bake for 30 to 40 mins..
