Kubbe Sukke

Kubbe Sukke - Supriya Bhat

Ingredients
Onions 2 medium
Garlic 7-8 flakes
Ginger 1/2 inch
Green chilly 1
Tomato 1 medium
Lime 1/2 medium sized
SRR chicken sukka masala 2 tsp
Chilly powder 1/2 spoon
Kasuri methi 1/2 spoon
Coriander leaves 2 strands
Grated coconut 4 tablespoon

Procedure
Heat oil in a wok. Add green chilly and saute. Add the onions( longish sliced) and saute till they turn translucent and slightly pinkish but not brown. Add G/G paste. When the aroma arises add SRR chicken sukka masala powder. Along with it add chilli powder. Fry for two minutes. Do not burn.
Add tomato and fry properly for around 7-8 minutes till rawness disappears. If you feel the mixture is dry now, add a little ghee and saute. Add the juice of lime. Add coriander leaves , kasurimethi and saute for a while.

Add clams. I used a 100 of them .. Medium sized ones.... Not a big number . came up to just a handful. Mix thoroughly.

Grind the grated coconut , half a spoon of SRR powder and a flake of garlic in a mixi.. Don't add water. Its just to mix the powder with the coconut and to make the gratings even smaller.
Add this to the clams. Mix properly and fry for two minutes.

Serve hot.
