Garlicky Spinach Raita

Garlicky Spinach Raita - Shobana Rao
Ingredients: 
Spinach, washed, 2 cups Garlic, finely chopped, 2 cloves Green Chillies, finely chopped, 2 Ginger, finely chopped, 1" piece Roasted Cumin Powder, 1/4 tsp Chaat Masala, 1/4 tsp Beaten Unflavored Yogurt, 2 cups White Sesame Seeds, 1 tsp Oil, 2 tsp Salt, to taste Method:

Wash spinach in several changes of water. Boil it in water till cooked, then drain and refresh in ice cold water. Chop this boiled spinach roughly and keep aside In a pan, add oil. When it gets hot add finely chopped ginger, garlic and green chillies and fry well. Now add the chopped and boiled spinach and fry well To this add salt and roasted cumin powder and fry for 1-2 minutes Now switch off the gas and keep aside. Allow it to cool completely. Beat the yogurt, add chaat masala and blend. Add the spinach and mix well. Garnish with roasted sesame seeds just before serving.
