Vegetable Upma With Oats - Shobana Rao
Ingredients:
Oats-2 cups Mustard seeds1/2 tsp Slit Green Chillies-3-4 Urad Dal-1 tsp Chana Dal-1 tsp Curry Leaves-1 sprig Grated Ginger-1/2 tsp Hing-A pinch Onion,chopped fine-1 water-1 1/2 cup Capsicum, small, chopped-1 Tomayo, med., chopped-1 Salt to taste Frozen corn kernels-1/2 cup Lemon juice-2 tsp Oil-2 tbsp or os reqd.
Method:
Dry roast the oats in a non stick kadai& keep aside.Heat oil on med. heat& add mustard seeds. When they splutter, add urad dal & chana dal. When the dals change colour, addhing, ginger, green chillies& curry leaves.Add chopped onion & fry till light brown.Add water & salt to taste.You can vary the ratio of water to oats depending on the consistency you like.
