Shahi Aloo Gobi Masala - Nandini Kini
INGREDIENTS:
1 cup cauliflower florets
1 cup potato cut into cubes
2 chopped onions
1 tsp ginger garlic paste
2-3 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
2 tblsp fresh cream
1/2 cup milk
2 tsp kasoori methi (dry feugreek leaves)
Chopped coriander leaves
Salt to taste
Oil to fry + 5 tsp
FOR MASALA : 2 tblsp fresh coconut, 2 tsp poppy seeds (khus-khus), 8 cashew nuts soaked in water
Make a fine paste of above ingredients and keep
PROCEDURE:Wash gobi florets and potato cubes and spread on a kitchen towel for 10 minutes and then deep fry it
Keep it on a tissue paper
In a kadai take oil and saute onions chopped till translucent
Add ginger garlic paste and fry
Put masala and fry well for 5 minutes
add all the spices ,milk,and fried gobi,aloo cubes
Add salt to taste , fresh cream and kasuri methi and stir well
Make it boil for 5 minutes and garnish with fresh cream and chopped coriander leaves
Serve hot with roti ,naan or paratha
