Rcp...you can boil the potatoes ,keep them aside.In another pan,take a tablespoon oil,roast few red chillies,then add tsp of uraddhal and 2-3 teaspoon of coriander seeds.Grind them along with 1 cup of coconut ,it's normally ground little coarse n less watery.Once done ,bring gravy to a single boil,now add boiled cubed potatoes to them,simmer and season them with red chillies,curry leaf,and mustard seeds.If you want add bamboo shoots,you have to chop them,wash them well.Its also soaked in water overnight to get bitterness out,then use them in curries.I insist on cooking bamboo shoots and cubed potatoes seperately to get good flavors.Because both potato and bamboo shoot need different boiling temp.
