Cream of broccoli & burnt garlic soup

Cream of broccoli & burnt garlic soup - Tanushree Aich


Recipe :
  • In a wok, add 3 tbsp butter & some olive oil, add in sliced garlic cloves, brown them well ( atleast 9-10 cloves). Reserve a few for garnishing
  • In the same wok add spring onion whites, saute till they wilt
  • Add in peeled n cubed potatoes, saute for abt 5 mins,
  • Add in broccoli florets ( washed n immersed in salt water pre cooking)
  • Saute for abt 10 mins, add in 3 cups vegetable stock 
  • Add in 2-3 tbspns oats
  • Let it pressure cook till veggies r cooked
  • Cool & blend in a mixer
  • In the same wok, add a little butter , add the pureed broccoli potato mixture
  • Add 1/4 th cup milk & abt 2 tbsp cream
  • Simmer , add salt & pepper
  • Lastly garnish with burnt garlic pieces pre serving!!
