Boondi Ladoo

Boondi Ladoo - Vidya Nayak Shenoy
My first attempt ( Not perfect at all.. I don't have a boondi maker.. tried it with the frying ladle..)
Thanks to Shobha Hegde for the recipe. I did not add the food colour.. Have added raisins fried in ghee and cloves pd too along with cardamom pd
Recipe: 
Ingredients 
3 cups besan, 
4 cups sugar, 
2 cups water,
1 tsp elaichi powder, 
a pinch of yellow food color, 
a pinch of saffron, 
2-3 tbsp ghee. 

Method:
At first wisk the besan with a little water to form a batter. It should be pouring consistency. Keep aside. Keep oil ready in a kadai to fry boondis. In the meantime. Take a flat bottomed pan and add sugar & water to form syrup. It takes around 11-13 minutes to get the 1 string consistency. To test it take a drop of syrup between 2 fingers . If it forms 1 thread without breaking its done. Turn off the gas . Add yellow colour, saffron, elaici. Now heat the oil and start frying the boondis. Oil should not be too hot, just medium hot. You need a boondi maker to do this step. Boondis should not be too crisp. Take it out and directly pour it in the sugar syrup. Repeat this step till all boondis are done. Also after every batch mix the boondi in the sugar syrup. Add ghee too, which gives a good flavour. Once all done keep aside for 30-45 min till syrup is absorbed and boondis look dry enough to bind together. 
Optional : can add any kind of nuts too.
