Bread Pudding

For 5 glasses bread powd, I took 21/2 glasses crystal sugar (then powdered it ) eggs, 4, milk 2 glasses, vanilla Essence 8 drops and Cocoa pwd...8 tsps. ... Plz use the same glass for measuring all ingredients...I baked this in Microwave convection 180 Degree C.. for 40 mins..have added chopped cashews n candied cherries.

Buttermilk Pancakes

Recipe:
1 1/2 cup flour
1 cup buttermilk
1/2 cup water
1 egg
2 t baking powder
1/2 t baking soda
Vanilla essence
Sugar to taste
1/2 t salt
2 T vegetable oil/ ghee
Mix the dry ingredients and the wet separately and then mix together and let it rest

Recipe :
Take 1 cup of Maida, add 2 tsp sugar powder, cardamom powder n 1/2 cup ghee or oil..Mix and make the dough like chapathi dough by adding lil water..Make lemon size balls, fllatten it lil .. On a low med flame ,deep fry in oil till slight brown n keep aside.. Now in a pan take 3/4 cup of sugar add lil water brg to boil, when it started to bubble n bcm lil thick n get one string consistency, turn off the gas..Mix well.. Now soak the fried saat one by one in sugar syrup n place on greased tray..Take out once it s completely cooled down.. Saat is ready


Mushroom Masala

Recipe:-

Wash n cut button mushrooms in quarters
In a wok, add oil, saute the mushrooms for just abt a min & remove
Now add whole garam masala - baj leaves, cloves, cinnamon, cardamom
Then add finely chopped onions & green chillies
Once onions turn translucent add ginger garlic paste
Saute until rawness goes, add kashmiri chilly pwdr, turmeric pwdr, garam masala pwdr
Add tomato puree n cook for abt 5 mins till masala leaves sides
Now add cashew paste,
Add whisked thick curd, saute n mix well
Add the mushrooms
Let the masala thicken n coat the mushrooms well, add lightly crushed kasuri methi
Adjust the salt
Lastly garnish with chopped cilantro!!

PS : u may add a lil water in the end to adjust the gravy thickness

1 cup urad dal
2 tbl spns fresh coconut
4-5 curry leaves
1 tea spn ginger (cut into tiny pieces or grated)
2-3 green chilies(cut into tiny pieces)
Oil
Salt

Method:
Soak urad dal for around 2 hours. Grind it into a paste (with minimum or no water), the paste need not become very soft.
Add coconut, curry leaves, ginger, green chillies and salt. Mix well.
Heat oil. Drop small balls of the batter in hot oil and fry on a medium flame.

Boil 2 potatoes n mash it..Take 1 cup sweet corn n 1 tsp ginger garlic paste grind only one round in mixi just to crush corns..if u do more it vl leave water..Add this to potatoes, then add 2 bread slices (dip in water n squeez all the water) add chopped green chiilli , garam masala powder n salt, n lil bread crumbz..mix well ..it shud hv a consistency of chapathi dough..make small balls, flatten it into desired shapes..roll over them in bread crumbz..n keep in the fridge for 4 hrs.. Then deepfry in oil.. While frying put only 2-3 cutlets in hot oil as, it hs bn taken out frm fridge, oil bcm lil cool if u put more n cutlets vl break..i have used rusk powder instead of bread crumb n added onion n corinder leaves to the dough.

Ingredients:

1.crabs- 4/5

2.grated fresh coconut-2cups

3.long cut onions-5/6

4.garlic cloves-10

5.ginger-3/4 inch

6.kashmiri or bedgi whole red chillis-7/8

7.haldi-1tsp

8.whole garam masala-6cloves,1inch cinnamon,dhania seeds-2tabsp.,jeera-1/4tsp,saunf- 1/2tsp,black

pepper-6/7,green elaichi-3,optional(small piece dagadful,javitri,1/4sp khaskhas,)

9.oil -4-5tabsp.

10.dhania leaves-finely cut-1/2cup

11.green chillies-3/4

12.salt-as per taste.

13.finely cut medium size tomatoes-3

Preparation:

1.wash crabs..clean it and make 2 pieces..

2.grind 1/4 cup dhania leaves,green chillies, 5 garlic cloves, 2inch ginger piece without water.

3.marinate crabs with salt,haldi,and ground green masala,keep aside.

4.take 1sp.oil in a pan roast all whole garam masala for 1 minute

5.take 1tab sp.oil in a pan roast long cut onions,5garlic cloves,ginger piece,fry untill light brown add

grated coconut and roast it till coconut gets little brown.

6.grind above roasted garam masala,roasted onion coconut,red chillies,little dhania leaves together with

water and make fine paste.

7.take 3tabsp oil,add tomatoes fry for few minutes, add crabs fry for 3to 4 minutes,add ground above

masala,salt as per taste,add water and cook it .keep gravy as you require.

8.garnish with dhania leavesa..crab curry is ready to serve.

Fry about 1tsp methi and 1/2 tsp jeera and grind along with coconut +red chillies + yoghurt + salt. Prepare a seasoning of mustard +urad dal+ curry leaves. I prefer using ghee for frying and seasoning. Also forgot to add urad dal to the seasoning

Recipe:
I skinned the potatoes n pricked them with toothpicks. In a kadhai, in a lil oil added jeera and allowed it to splutter.Added few curry leaves n sauted till texture changed. Added the potatoes pre-soaked in water. Added no water at all. Then added chilly pwdr turmeric pwdr n salt. Covered n let it cook on dum. Once done, added lot of lime juice, mixed n garnished with chopped cilantro. The pricked holes allow the masala to penetrate and when dum cooked it really tastes yum n so aromatic. Do try it. (Amma used to add hing too...I hvnt )

Ingredients:
Cooked rice-3 cups (blend in mixer to get a very fine paste)
Milk-2 lit
Milk maid-1 tin
Cornflour-1/2 cup
Whipping cream-1 ½ cup
Sugar-2 cups
Vanilla essence-3 drops
Method:
In a big vessel mix all the above ingredients one after the other and make to a fine thick paste…just like that of idly batter…
Now pour in a plastic bowl and cover and keep in freezer to set overnight or minimum 10 hrs.….
Softttttttt,smotthhhhhhh,yummmmmmmm ice cream is readyyyyy………

Recipe
Cook 1/2 cup moong dal separately.. Dont overcook..It shud hold its shape..Now in kadai, put lil oil ,fry 6 to 7 crushed garlic cloves n red chillis, add washed n chopped methi leaves abt say 2 cups..fry for 2 -3 min. now add cooked dal n salt ..Add lil water,u can add lil jaggery if u want ,.. Cook till it becomes dry.. add 1 tbsp grated coconut (optional).. cook for another min.

Pressure cook potatoes (do not overcook)cut into PCs .apply salt n keep aside...in a kadai...add oil...splutter jeera...add sliced onions... Fry til lite brown...add sliced capsicum..fry for sumtim Add sliced tomatoes.. Fry till pulpy..add grated ginger...Lil tumeric... 2 tsps Garam masala PD...add d potatoes 2 tsp s of besan n mix well...add Lil water ...add salt if necessary.. Roast for some time in low flame... Garnish wid coriander leaves..tastes yummm wid phulkas

Matar Paneer

Recipe:
Paneer 200 gms
Peas a small cup full
2 medium onions
2 medium tomatoes
6-7 cashews
Turmeric pwdr 1/2 tbspn
Kashmiri chilly pwdr 1 tbspn
Kitchen king masala 1 tspn
Ginger garlic paste 1 tbspn
Thick curds 1/2 cup
Milk 1/2 cup
Cream 3-4 tbspns

Boil sliced onions, tomatoes(make two slits) & cashews in lil water
Once they go tender n r cooked , cool n puree
In a wok add oil, saute gg paste, add the onion tomato cashew paste cook till rawness goes
Add turmeric, chilly n kk masala
Add whisked curd(add no water while whisking)
Add peas
When the masala leaves oil add milk, & paneer pieces
Simmer for abt a min
Add cream n garnish with cilantro
Adjust salt

Grind together
2tbsp coconut 2 tomatoes 5 red chillies
1 tsp pepper 1/2tsp jeera 1/4 tsp saunf 1 clove 1cinnamon ginger & garlic
Fry 1 big finely chopped onion in oil

Add curry leaves salt
Boiled eggs

HEAT GHEE IN A PAN THE PUT 1 SP OF BATTER ( PUT IT FROM A LITTLE HEIGHT SO IT WILL MAKE ROUND SHAPE) FRY TILL GOLDEN BROWN
AND TAKE IT OUT AND PUT IT IN HOT SUGAR SYRUP FOR 5 MINS
AND TAKE IT OUT AND SE

NOTE: SERVE IT HOT WID COOL RABADI TASTE AWESOME

Powder 1/4 cup oats.. pres cook 2 apples and puree them.sieve 1/4 cup whole wheat flour with 1tsp baking powder... add oats,3/4 cup powdered sugar , 5 tbsp cocoa powder and mix ..now add apple puree,1/2 tp vanilla essence,1/4 cup whisked curds at roomtemperature..and gently mix..lastly add walnuts ... grease a small tray and spread this mixture and bake at 180 deg for 30 mins ... sprinkle some nuts on top too if you wish... turned out to be very soft ...recipe courtesy Quaker oats ..

gourd) into roundels ..wash n keep aside...boil potatoes n mash
them...add salt..chilli pd..jeeera seasoning n mix well...stuff this
into the roundels...dip in chiroti rawa or rice flour and shallow fry on
tawa till done...sprinkle lil water initially n cover wid lid..fry til
golden brown...squeeze lime wen u serve...stuffed potato snake gourd(

Recipe
For the koftas
Boil 2 raw bananas, 1 large potato. Peel & mash when slightly warm, add finely chopped onions, ginger, spice pwdrs (turmeric,chilly,cumin,coriander), add abt 2 tbsp lightly roasted besan , chopped green chillies, cilantro & salt
Make small balls & refrigerate for abt half hr & deep fry. Yields abt 9-10 balls

For the gravy
Boil 2 medium onions, 2 large tomatoes, handful of cashews in water
Blend to a fine paste after it cools
In a wok, add oil, add ginger garlic paste, saute to remove rawness, add the puree, saute till it comes to a boil
Add all spices - chilly turmeric cumin coriander n garam masala pwdrs
Saute till the masala leaves oil
Add 1/4 th cup milk & abt 5 tbspns fresh cream
Simmer for a min, add salt & chopped cilantro
Drop in the koftas only before serving, koftas in the curry n not vice-a-versa!

Here is the recipe in kannada from Jaya V Shenoys, 'OoTa Upahara'. for those who cannot read kannada, below is a translation
SanDige Ambat
6 Ashgourd oDii ( Kunvale oDii)
¼ Coconut (grated)
2 Red chillies (roasted)
Tamarind ( size of a tamarind seed)
Small piece turmeric
½ tsp Methi seeds
½ spoon mustard
Curry leaves few
Oil for frying
Salt to taste
Fry the oDii in oil and keep aside.
Grind coconut+red chillies+tamarind+ turmeric. Fry methi seeds in a little oil and add to the masala and grind (just 1 - 2 turns). Add water to get the desired consistency and salt to taste. Boil the mixture. Prepare a tadka with mustard and curry leaves and add it to the gravy and then add the fried oDii

Quick Cauliflower

Recipe:
Marinate cauliflower florets with salt, haldi pwd, chilli pwd, dhania
pwd and garam masala pwd in 2 tbl spoons of dahi. 
Keep aside for 10 mins. Chop onion into cubes. 
Heat oil in a non stick pan and add jeera.
When they splutter add the onion cubes and fry till pink. 
Then add little garlic paste and fry. 
Now add the marinated cauliflower and mix well 
and cover and cook for 2-3 mins. 
Do not add water as the moisture in the dahi cooks the cauliflower. 
Do not over cook as well. 
Saute on high flame to give it a slightly burnt taste. 
Add chopped coriander leaves and serve hot with rotis..tastes
very good.. I Have added methi leaves too..

Fry a handful of kuvale vodis & keep aside. Grind together 1 cup of grated coconut, 3-4 dried red chillies & marble sized ball of tamarind to a smooth paste. Mix one cup rice flour and half cup wheat flour in water so as to get dosa consistency,Add one fistful of grated coconut,chopped green chillies as per taste,sugar-1 tsp,salt as needed and finely chopped onions and coriander leaves.Thats it.Enjoy with tomato ketchup,sauce or any chutney.But mushroom masala really goes well.

Grind 1 onion 1 tomato 1 green chilly 1 garlic clove 1 inch ginger piece 1 tsp cumin 1tsp pepper corns with 1 tbsp coriander leaves along with 3 almonds and 3 cashew nuts in a mixie . Heat 1 tsp oil in a pan add a sprig of curry leaves and fry this paste well . Add 1 tsp kashmiri red chilly pwder 1 tsp salt 1 tsp coriander powder n 6 large roughly chopped button mushrooms and cook without adding water . Add chopped parsley.

Make tamarind water with one lemon sized gooli of tamarind. To this add 1tsp each jeera pwd n dhania pwd, lil haldi, 1 tsp pepper pwd. Add chopped garlic 10 cloves, few green chillies and few curry leaves. Add salt to taste n mix well. Heat 2 tsp oil in a pan n add this masala mixture. Let it reduce then add the fish pcs ( abt 4 med mackerels) . Cook for 2-3 mins n then turn over ... Let masala coat frm all sides. U can make with king fish n pomfret also.

Sweet Pumpkin Idlies

Recipe..
Mix together 1 cup grated pumpkin, 1 cup grated coconut, 1 cup grated jaggery, 1 cup fine Rava,(local rava) a pinch of salt, a pinch of Cardamom pwd and cashewnuts and raisins. Mix well and add little water if it is too dry. Keep it aside for 15 mins and make idlies. Serve with ghee.
