Carrot Cake

Carrot Cake - Anitha Shenoy
Ingredients...

grated carrots-3 cups
maida-2 cups
sugar-2 1/2 cups
oil-1 cup
eggs-4
nutmeg-a pinch
cinnamon powder-2 tsp
baking powder-2 tsp

Method....

Sieve maida,cinnamon powder,nut meg and baking powder in a bowl and mix it properly.
In another bowl mix oil,eggs and sugar and beat it till u get good froth.
for the wet mixture add the dry mix and mix it till it gets well incorporated.Lastly add the
carrots and mix well.

Preheat the oven in 180degrees...bake for 20-22mns.

Can prepare this cake in microwave oven as well...here set the oven for 6mns high and 3mns for half the power..suppose ur microwave is 800watts..half is 400.

prick it from a toothpick to check the cake is done...if not keep for few more mns.
