CARROT PICKLE

CARROT PICKLE - Rajashree Acharya Kamat

Prepare this especially in winter when the carrots are red & big.

1. Take 1/4 kg carrots. Wash them, remove both the ends & scrape the outer skin.
2. Chop them into rectangular pieces.
3. Mix 1 tblsp salt into these pieces & keep aside.
4. Mix 1 tblsp chilli powder,4-5 tsp mustard seeds powder,1/2 tsp hing,1 tsp fennel seeds (Badishep) powder & 1/2 tsp turmeric together.
5. Add the carrot pieces into this& mix properly.
6. Add juice of 2 lemons into this & mix.
7. Heat 4-6 tsp oil, cool it & then add to the prepared pickle.
8. Fill this in glass bottle & keep in sun for 2-3 days.
9. Refrigerate this pickle. Will last only for about 6 months.
