Amaranth leaves n brinjal stir fry

Amaranth leaves n brinjal stir fry  -  Tanushree Aich


Recipe:
Heat abt 2 tbspoons oil, add abt a tsp cumin seeds, pinch of hing, whole red chillies, once roasted add quartered brinjals (soaked in salt water), fry till brinjals get slightly brown n are half done, add chopped amaranth leaves, chilly pwdr, turmeric pwdr, amchur pwdr & salt. Cook wit lid till cooked, season with browned garlic cloves!
