Dahiwale Dum Aloo

Dahiwale Dum Aloo - Roopa Suraj.

Recipe :

Ingredients : 20 boiled baby potatoes, 3/4 cup thick curd, 1 onion chopped, 2 bay leaves, 1 pinch hing, 2 tsp red chilli pdr, 1/4 tsp turmeric pdr, 1 tbsp ginger garlic paste, 1 tbsp coriander seeds, 1/2 tsp cumin seeds, 1 pod green cardamom, 1 cinnamon stick, 4 cloves, 8-10 cashew nuts, 1/2 tbsp kasoori methi, 1 tsp sugar ( optional) 5 tbsp cooking oil, 2 tbsp chopped coriander leaves, salt to taste.... 

Method : Peel the boiled baby potatoes & prick them with a fork....Heat 2 tbsp oil in a pan , add the potatoes & shallow fry on low flame till golden...., drain & transfer to a kitchen tissue..... Grind coriander, cumin, cardamom, cinnamon, cloves,& cashew nuts in a mixer into dry pdr.... Heat remaining 3 tbsp oil in a kadai add hing & saute for a while... add bay leaves & onion & fry till onions turn light brown,add ginger garlic paste & saute, add dry mix pdr, saute for a minute, beat curd & add it in the kadai, add turmeric pdr, chilli pdr, & mix....stir for 2-3 minutes or till oil seperates....add fried potatoes, kasuri methi, sugar, salt & cook on low flame for 2 minutes... Add 3/4 cup water & bring to a boil ..when it starts boiling cook covered on low flame till u get desired consistency of gravy.
