Paneer Veg Potlis - Nutan Shenoy-Kini
Ingredients :-
Maida – 2 cups.Rice flour – 2 cups.
Black Pepper powder – 2 tsp.
Ajwain (Carom) Powder – 1 tsp.
Salt to taste.
Oil for frying.
Paneer (crumbled ) – 1/2 cup.
Bell Peppers – Red, Yellow, Green – 1 each ( finely chopped).
Spring Onions – Greens & Onions– both, finely chopped.
Garlic – 10 flakes. ( crushed).
Red Chilli Powder – 2 tsp.
Kashmiri Red Chilli Powder – 1 tsp.
Turmeric Powder – 1/2 tsp.
Salt to taste.
( Other veggies can be added as per individual choice)
Method :-
1. Mix together the maida & rice flour & a little water, alongwith salt, ajwain powder, pepper powder.2. Heat a little oil ( say 4 tbsp.) & pour over the flour mixture & knead into a smooth dough.
3. Mix together the Paneer, chopped Bell-Peppers, Spring Onions, Salt, Chilly Powder,Kashmiri Red Chilly Powder, Turmeric Powder & crushed Garlic.
4. Take a small ball of the dough & spread it to the size of a puri.
5. Put a little of the stuffing & bring all the ends together.
6. Slowly start folding the loose portion into pleats to form a potli.
7. Ensure that the top is fully sealed, so that no stuffing comes out.
8. Make a small string out of the dough & wind the potli & fasten it into a knot.
9. The Paneer – Veg. Potli is ready.
10. Heat oil in a degchi. When the oil heats up, add the potlis one by one. Fry till golden brown.
11. Drain on absorbent paper & serve with Tomato-Chilli Sauce / Pizza sauce / Schezwan Sauce as per individual taste.
