2 Cups Maida
1/2 Chiroti Rava
salt to taste
2 tsp chiroti rava extra
2 tsp ghee
Oil to fry
2 cups sugar pd
2 tsp cardamom pd
1 tsp butter
Method
Mix all the flours , salt and butter except for 2 tsp extra chiroti rava.
Add water to make like puri dough.
keep aside for 1 hour .
Make 7 balls of the flour of chappati balls size.
Roll out into very thin Chappatis.
Keep one chapati on a flat board. Apply a bit of ghee on the chapati, sprinkle some chiroti rava on it .
Keep another slightly down on it and follow the same procedure.
complete this for all 7 chappatis.and then roll it like swiss roll.
cut into 1/2 inch pieces. and roll out into puris from centre
This is not like normal puri. All the layers must be clearly visibly .
Heat oil in a pan and deep fry these Chirotis till light brown.
Press the chirotis while frying so that the layers separate ( dont apply too much pressure )
Drain al these Chiroti on a kitchen towels.
Sprinkle Sugar and cardamom pd on it when still hot .
Store in air-tight box when it cools.
