Sweet Idli

Sweet Idli - Nisha Baliga Shenoy

Ingredients

2 cups Dosa rice
2 cups powdered Jaggery
2 cups grated coconut
1 cup beaten rice ( poha )
1 tsp methi seeds
salt to taste
buttermilk to soak
pinch turmeric pd
one pack of ENO fruit salt.
METHOD

Soak the rice along with methi seeds in buttermilk for 4 hours .
Grind it to a grain consistency just like chiroti rava along with coconut and jaggery and soaked poha.
The batter must not be runny, it must be just enuf to pour from ladle like Idli batter.
Add a pinch of turmeric pd , mix well and keep aside to ferment overnite.
Next morning,mix Batter well, add salt to taste and add a pack of ENO ( FRUIT SALT ) , Mix the batter well.
keep aside for 2 minutes , meanwhile get ready for steaming the sweet idlies.
Greas the idli mould. pour the batter and steam the idlies.
U can add some raisins and cashews whiling steaming , serve Hot with dollops of Fresh butter !
