Recipe:Baingan bhareet as Bharta is called in Maharashtra...Roast baingan and remove chilka and clean,add finely cut onions ,2 tbspn fresh dahi,salt and cut coriander leaves.Put phanna of oil mustard ,1/2 spn mirchi pow(very little ) 2/3 green chillies finely cut (as per your need for spice). Mix everything well and serve....Baingan Bharata....
