Potato Chettinad

Potato Chettinad  -  Nandini Kini

INGREDIENTS: 
3 boiled potatoes 
2 sliced onions 
1 chopped tomato 
5 tsp oil 
1 tsp mustard 
1/2 tsp asafoetida powder(hing) 
curry leaves 
1 tsp turmeric powder 
coriander leaves 
3 tsp fresh grated coconut Salt to taste FOR THE MASALA POWEDER: 1/2 inch cinnamon 2 cloves 1 cardamom 6 pepper corns 2 tsp saunf 5-6 red chillies Dry roast all these and make a fine powder PROCEDURE: Boil the potatoes in cooker (dont over cook ),peel and cut into cubes Heat oil in a kadai ,put mustard When it splutters,add curry leaves,hing,turmeric powder,sliced onions and saute for 5 minutes Add the chopped tomatoes and fry till it blends well Now add potatoes with salt to taste and roast it for 5 minutes Add the masala powder and stir well Add grated coconut and chopped coriander leaves and serve hot with roti this was POTATO CHETTINAD!! spicy ,tangy potato sabji !!
