Dimer Kosha(Bengali Style Egg Curry)

Dimer Kosha(Bengali Style Egg Curry) - Sunayana Gupta

Ingredients:

Eggs-4
Onion ( Sliced) – 1 Medium
Tomato (Chopped) – 1 Small
Ginger Garlic Paste – 1 ½ tsp
Cumin Seeds – 1 tsp
Black Peppercorns – 5-7
Cloves - 3
Turmeric Powder – ½ tsp
Red Chilly Powder – 1 tsp or to taste
Sugar – ¼ tsp (Optional)
Garam Masala Powder – 1 tsp
Coriander Powder – ½ tsp
Lemon Juice – 1 tsp
Salt – To Taste
Oil – 2-4 tsp
Method –

1.Cut eggs in cubes. Keep aside.

2.Heat oil in a non-stick pan. Add cumin seeds, peppercorns, cloves, turmeric pd. and sliced onions. Saute till onions become golden. Add tomatoes and cook till they get mushy.

3.Now add ginger-garlic paste and cook till the masala leaves oil.

4.Add eggs, salt, garam masala pd., coriander pd., red chilly pd., sugar and give a stir.

5.At the end add lemon juice. Garnish with fresh coriander or chopped green chillies and serve.

This can be served in the main course with phulkas, parantas or rice…….and can also be served with bread/toast in breakfast. Great for lunch boxes as well.
