Undi - Laxmi Bhandary
Ingredients: 1/2 kg. rice, 1 cup coconut gratings, 1 tsp fenugreek seeds, 3 tbsps oil, 1 tsp mustard seeds.
Method: Soak rice in water for 2 hours. Wash, grind with coconut gratings a bit coarsely. Add salt. Transfer the paste to a vessel. Bring to the consistency of batter for plain dosa. Prepare seasoning in frying pan with fenugreek and mustard seeds in oil. Drop the ground paste in it and turn over till it becomes fairly stiff. Remove from fire. Shape ball of the paste, making the small depression in each. Place the undi in to a pedavan (idli vessel) and steam under cover for 15 to 20 minutes. Then take out and serve the undis with sambar or jaggery syrup.
