Baingan Masaledaar - Tanushree Aich
Ingredients
Small brinjals abt 5-6
1 onion finely chopped
Ginger 1 inch piece finely chopped
Garlic 2-3 cloves finely chopped
1 tomato chopped
Spice pwdrs ( turmeric,coriander,chilly & cumin) as per taste
1 green chilly slit
Pinch cumin seeds
3-4 tbspns Oil
Coriander lvs for garnish
Cut the small brinjal into quarters removing the stem
Smeat these with haldi, chilly n salt n fry until almost cooked
Remove & keep aside
In the same pan with the left over oil add cumin seeds
Once they splutter, add ginger garlic pieces, slit green chilly
Add onions cook till rawness goes
Add tomatoes...cook with lid till tomatoes r mashed
Add spice pwders, saute till masala leaves sides
Add the fried brinjal pieces
Add a little water, n cook with lid till the brinjal soaks the spices
Garnish with coriander leaves
