Dates & Raisin Mini Loaves - Asha Pai Ingredients: 1 cup maida, 1tsp baking powder, 1/2tsp baking soda, 1 tsp cinnamon powder to be sieved together. melt 4 tbsp. of butter, add 5 tbsp of milk, 2 tbsp of honey and 1/2 cup of sugar powder and mix it together. add 2 eggs and 1/2 tsp of vanilla and mix well. meanwhile, now mix in the dry ingredients to the liquid ingredients and fold. do not over beat. lastly add 2 tbsp of raisins and 5 or 6 chopped dates dredged in 1/2 tsp flour to the prepared batter mix with light hand. pour into 6 buttered and floured mini loaf tins and transfer immediately to the preheated oven and bake in at 180C for 13 to 15 mts or till done. alternately 12 muffin tins may be used, in which case baking time is reduced to 10-12 mts.
