Carrot 65 - Anita Pai
Recipe:
250 gms carrots, cut into thin round circles
50 gms maida (all-purpose flour)
50 gms besan (gram flour)
1 tsp ginger-garlic paste
salt to taste
1/2 tsp chili powder
1 cup curd (yogurt)
4-6 green chilies, slit lengthwise
Few sprigs of curry leaves
oil for frying
A pinch of orange color.
Mix maida besan gg paste salt to taste n make a batter. Add food color. Dip the carrot roundels in batter n deep fry till crisp . Drain n keep aside. Heat a pan with oil. Add green chillies, curry leaves n garlic chpd . Sauté for a min add soya sauce , 1/4 tsp vinegar, 2 tbs tomato sauce n lil soya sauce. Toss in the fried carrots n mix well n serve hot.
