Potato Pepper Roast - Sandhya Puranik.

cut 3 potatoes in square pieces vth medium thickness....marinate dem vth 2 teasp pepper powder .salt n 1 teasp lemon juice for 1/2 an hour..... meanwhile crush ginger (1'' piece ) + garlic ( 6 to 8 cloves) + fennel seeds ( 1 teasp) + whole pepper (1 teasp) coarsely... ,,,,do not make it a fine powder ..... now heat coconut oil....and add narrowly sliced onion (2 ) .few curry leaves and 2 green chilies..... saute till dey turn yellowish.....now add d spice powder....and lil haldi too and saute well... add a teasp of soya sauce and a one n half teasp of tomato sauce.....mix well .. now squeeze d potatoes and add it to d masala.....mix well...cover vth a lid n keep on low flame till its done.....no need of adding water......d potatoes vll get roasted nicely..... garnish vth curry leaves.......... note... check d spice level and if u feel d color s not appealing add 1/4 teasp f kasmiri red chilli powder too... (optional) do not add water at all ...... and if possible try to cook in a flat pan (lyk one kept in d pic) instead of a kadayi... ...wud help to roast d potato pieces evenly
