Hot n Sour Sesame Eggplants

Hot n Sour Sesame Eggplants - Sunayana Gupta

Eggplants-500gms
Ginger-1tsp
Garlic (Chopped) – 2 tsp
Green Chilly (Chopped) – 1 tsp or to taste
Tomato Sauce – 2 tsp
Green Chilly Sauce – 1 tsp
Soya Sauce – 1 tsp
Honey – 1 tsp
White Sesame Seeds – 4 tsp
Salt – To taste
Water – 1/2 cup
Oil – 2 tsp
Method –
1.Wash eggplants, remove stalks and cut them in quarters lengthwise. Keep aside in a bowl of ‘Salt Water’. This won’t allow their color to turn black.2.Heat a pan and dry roast sesame seeds till pink. Transfer in a plate and keep aside.
3.Now, in the same pan heat oil and add chopped ginger-garlic and green chillies.. Saute till light brown.
4.Add tomato sauce, green chilly sauce, soya sauce and cook for half a minute.
5.Strain the salt water from eggplants and transfer them into the pan.
6. Make a quick stir. Add salt, water and cover it with a lid.
7.Cook for some 10-15 minutes. Open the lid and check if the eggplants are cooked.
8.Now add honey and stir gently taking care that the eggplants do not get mushy.
9.Garnish with roasted sesame seeds and serve hot.

Sunayana’s Tip –
Be very careful while adding salt in this curry, as we have made the utmost use of ‘Sauces’ that already contain a good amount of salt.
