Guacamole

Guacamole - Sunayana Gupta

INGREDIENTS

Ripe Avocado – 2
Onion – 1 small
Garlic clove - 1
Lemon Juice – 2 tsp or to taste
Green Chilly (Chopped) – 1 tsp
Black Pepper (Crushed) – 1/4 tsp
Olive Oil – 2 tsp (Optional)
Salt – To taste
Method –

1.Chop onion into fine pieces. Keep aside.
2.Cut the avocado lengthwise, remove the stone and scoop out the pulp.
3. In a bowl take the pulp and with the help of a fork mash it.
4.To this add crushed garlic and all the other ingredients listed above (Except ‘Olive oil’).
5.’Guacamole’ is ready. Transfer into a serving bowl, top with olive oil and serve with your favorite crackers or chips.

Sunayana’s Tips –

1.Do not mash the avocadoes too much as this dip tastes great when it is a bit ‘Chunky’. Therefore, ‘Fork’ works best. Do not use an electric pulsar/grinder.

2.For a ‘Perfect Guacamole’…..you need to select the ‘Perfect Avocadoes’.

The avocadoes with ‘Green’ skin are a “BIG NO”…as they are very firm. Prefer, avocadoes with ‘Black Skin’. Hold it in your palm and press gently. If it feels ‘Slightly’ soft, then it is PERFECT FOR GUACOMOLI. But, if it feels ‘Very’ soft, then it might be ‘Over Ripe’ and not good for the dip.

3. Serve the dip immediately. Do not make it in advance and leave on your counter top. It may turn brown and may not taste good n fresh.
