Coriander Rice - Sunayana Gupta

Boiled Rice – 4 cups
Fresh Coriander (Chopped) – 1 cup
Onion (Medium) - 1
Coriander Seeds – 1 tsp
Cumin Seeds – 1 tsp
Dry Red Chilly – 2
Red Chilly Powder – 1/2 tsp
Lemon Juice – 2 tsp
Salt – To taste
Oil – 2 tsp
Method –
1.Peel onion and slice into thin pieces. Keep aside.2.Crush the coriander seeds coarsely. Keep aside.
3.Heat oil in a pan. Add cumin seeds , crushed coriander seeds & dry red chilly. Saute for few seconds.
4.Now add sliced onions and sauté till golden brown.
5.Add boiled rice, chopped fresh coriander, salt and give a nice stir.
6.Stir fry on medium flame for 2-3 minutes.
7.At the end add red chilly pd., lemon juice and give a stir.
‘Coriander Rice’ is ready. Serve hot.
Sunayana’s Tip –
If you are too busy, then skip adding ‘Onion’.
