Tawa Pulao

Tawa Pulao  -  Shobana Rao


Ingredients:

Cooked rice, 4 cups
Cooked green peas, 1/2 cup
Tomatoes, finely chopped, medium-sized, 2-3
Capsicum, small, 1
Cooked Carrot and Beans, 1/2 cup
Onion, big sized, finely chopped, 1
Ginger garlic paste, 1 tsp
Haldi (Turmeric) powder, 1/2 tsp
Jeera (Cumin) seeds, 1/2 tsp
Red chilli powder, 1tsp
Pav Bhaji Masala, 1 tbsp or as per taste
Oil, 2 tbsp
Salt, as per taste
Coriander leaves, 2 tbsp
Lemon juice, 2 tbsp
Cashew nuts, roasted, 5-6

Method:

Heat oil in a thick bottomed non-stick kadai
Add cumin seeds. When they sizzle, add chopped onion and fry. Then add ginger garlic paste and fry till the raw smell goes.
Add the chopped tomatoes and cook till they are soft
Next add the cooked carrots, beans and peas
Add the red chilli powder, turmeric powder, pav bhaji masala and salt
Cook for 2-3 minutes and stir till the masala gets well mixed with the vegetables
Add the chopped capsicum and mix well
Now add the cooked rice and stir till it is well blended
Add the lemon juice and garnish with fresh coriander leaves and roasted cashew nuts
Serve hot with raitha of your choice.
