Purple Baingan Masala - Sanjana Kamath

Wash baingan , chop small dice ,cut peeled potato in to small pieces ....heat oil ,add jeera + ginger garlic paste ,onion ,tomato , haldi ,daniya pwd ,red chilly pwd garam masala ....roast 3 to 5 min add baingan and potato ,sugar ,salt , aamchor pwd and little water ...close the lid and cook 10 to 15 min ....last add 1 spoon kasuri methi leaves. Garnish with coriander leaves fresh slice of lemon .
