Paneer Capsicum Wraps

Paneer Capsicum Chapati Wraps  -  Suman Bhat
Ingredients:
For Chapati ( Makes About 5-6 nos)-
3/4 th cup Atta
1/4th cup maida
3/4th cup warm milk
3tsp oil
Salt to taste
Mix all together to make a nice soft dough and keep aside for 30 mins
For Filling (Paneer capsicum onion and tomatoes masala) -
1 big bowl paneer cubes ( i used frozen u can use fresh as well)
1 Big capsicum cubes
2 medium tomatoes cubed and deseeded
2 onions cubed and separated layer wise
1/2 tsp chat masala
1/4 tsp garam masala
1 tsp pepper powder
2 tsp coriander powder
2 tsp chilly powder
1/2 tsp turmeric powder
2 tsp fenugreek dried
3 green chillies
1/2 inch ginger
4-5 garlic pods
Salt to taste
4 TBSP OIL


Procedure -


Heat oil in kadai when hot add the ginger garlic and green chilly paste when aromas spread add the onions cubed and keep gas on high flame and stir fry till it turns pink.Next goes the tomatoes..and all the spice powder and stir fry another while .Then add the capsicum and just stir fry for another min on high flame....last the paneer and then let it simmer for max 2-3 mins so that panner absorbs all the flavours .Let all the water if any evaporate ( kep on high flame to get it done fast else ur capsicum will loose color .Last garnish with corainder leaves and dried fenugreek leaves crushed and keep aside to cool
For the wraps : -
5-6 lettuce leaves
2-3 tsp tomato sauce or any other spread of ur choice ( mayo /chutney/ chilli sauce etc)
Make chapatis from the dough made previously.I roasted them well both sides in my first go itself with lil bit of oil...incase u plan to assemble it later on then half roast them and keep it in closed container so that they remain soft and supple.Roast them fully just before assembling.
Once chapatis are done spread a lil tomato sauce on them
Place one lettuce leaf in the centre so that the leafy portion protrudes out from the chapatis
Put ur filling in this lettuce leaf....this will keep ur chapati from getting soggy
Fold it from the down end to 1/4 above like in the pic
Then fold and cover from the loose two side and hold it together with a tooth prick
Serve it with coleslaw or any dip of ur choice.
Enjoy it while its still hot.
Paneer Capsicum Chapati wraps are ready to be served!!
