Kadai Mushroom

Kadai Mushroom - Laxmi Bhandary

Ingredients: 
200 grams mushroom, 2 capsicums (medium), 2 tsps coriander seeds, 5 red chillies, 2 green chillies, a small piece ginger, 5 garlic cloves, 1 tsp kasoori methi (dry methi leaves), 3 tomatoes ( finely chopped), 4 tbsps ghee, 2 tbsps coriander leaves (for garnishing) and salt to taste.


Method: 
Chop mushroom and capsicum in to thin longish pieces and keep aside. Grind together coriander seeds, red chillies, green chillies, ginger and garlic to a smooth paste. Add little water while grinding. Heat ghee in a frying pan, put the ground paste and stir in ghee till oil separates. Then add tomatoes and kasoori methi. Stir constantly till tomatoes dissolves in the gravy. Then add mushrooms and capsicum and salt to taste. Reduce the heat and stir till mushrooms and capsicums are cooked. When done, remove from flame and garnish with coriander leaves.
Instead of mushroom, paneer can be used with same masala and kadai paneer can be prepared.
