Lifafa Kachori


Lifafa Kachori  -  Tanushree Aich

For the lifafas

Maida 2 cups
Oil 2tbspns
Salt to taste 
Water


For the stufing

Grated paneer 1 cup
Grated cheese 1 cup
Ginger finely chopped 1 tbspoon
2 Green chillies finely chopped
Chilly n jeera pwdr pinch
Coriander leaves finely chopped
Salt to taste

Procedure

1.Knead maida into a soft dough using oil n water
2.Make small pedas of the dough( i made really small ones similar to the size uses for a puri)
3.Roll them into super thin rotis
4.Alongside make the stuffing ready mixing all items mentioned under the stuff list
5.Fill in a spoonful of this stuffing in the puri.
6.Now fold the puri like an envelope...one corner at a time
Once folded it will look fluffy & square 
7.Roll it once horizontally & vertically to flatten it a bit...ensuring that the filling doesnt spill out
8.Deep fry just as u fry puris till the lifafas fluff up n are browned evenly on both sides.

Lifafa kachoris r ready n taste best with coriander chutney or ketchup!!
