Carrot Halwa - Laxmi Bhandary
Ingredients:
Carrots 8-10, sugar 3/4 cup, milk 2 cups, 1 tsp cardamom powder, raisins 10-15, ghee half cup, and cashew nuts 5 - 6.
Method:
Peel wash and grate carrots. Wash raisins and pat them dry. Heat ghee in a thick bottomed pan, add grated carrots and saute for 5 minutes. Add milk and cook on medium heat for 5 to 6 minutes or till milk evaporates and carrots are cooked. Add sugar and turn over for another few minutes. When ghee reappears on sides of the vessel, mix cardamom powder. Garnish with cashew nuts and raisins.
