Ash gourd Burfi - Nisha Baliga Shenoy
Ingredients:4 cups of heaped grated Ashgourd
4 cups sugar
4 tbsps ghee and little more
1 tsp cardamom pd
some cashew nuts fried in ghee
METHOD
In a thick bottom pan or vessel, add the grated ashgourd along with its water
when hald cooked add sugar.
Mix well and keep stirring.
meanwhile grease a plate with ghee.
Keep the mixture stiring well till it forms a lump.Add ghee.
Cook till it leaves sides. at this stage the mixture will begins to harden. switch off the gas.
Add cardamom pd and cashewnuts
mix well. transfer the contents into the greased plate.
After a while cut into desired shapes. let it cool down.
Transfer into airtight box and njoy !!!.
