Instant Appo and Chutney - Vidya Hegde.
I usually prepare these Appos during fasting, as it contain only urad dal and fine rava. It does not need fermentation. Soak the Urad dal for 3-4 hrs, Add water as needed and grind it to a smooth paste. For 2 cups of urad dal batter add 1 cup Rava(fine soji) and mix it, add water as needed to make it to a dosa batter consistency. Add salt to taste and chopped green chillis, ginger and cilantro to the batter and mix it well. Heat the appo kaayli in a medium flame. Apply oil, then pour the batter in to each section, cover it with a lid, after couple of minutes flip the appo. Apply oil as needed. When it is golden brown remove it from the kaayli, enjoy the hot appos with coconut chutney!
