Yam (suran) pepper fry - Ananya Ashwin Pai
Recipe:
Yam: 1cup cut in cubes
Pepper powder: 1tbsp + 1&1/2 tbsp
Lemon juice: 2tbsp
soya sauce: 1tbsp or more
corn flour: 3tbsp
curry leaves: few
green chilli: chopped
onion: cut in cubes
ginger: fine chopped
garlic: fine chopped
salt as per taste
oil
Kasuri methi: 1/2 tbsp
Method:
Clean the yam and cut them in cubes. Marinate it with lemon juice, pepper, salt and then rest it aside for an hour. Now heat some oil and take the yam piece, dust them in corn flour and deep fry them. keep them aside. Reserve the marinade for later use. Now in a wok, heat some oil and add the chopped oniones, ginger, garlic, green chilli and curry leaves one by one and toss them well. Add salt as per required, soya sauce, pepper powder, the reserved marinade. Stir them and then add the deep fried yam, kasuri methi. Toss them well till the sauce gets well coated to the yam. A yummy spicy starter is ready to serve.
