Halubai Sweet - Shobha Shenoy
Recipe:
1 Cup Rice {I used Basmati.. You could also use regular rice.. }
1/2 Cup freshly grated Coconut
1/2 Cup Jaggery
2 Cardamom pods/ Elaichi
Butter/Ghee to grease the plate
Wash well and soak rice for 2 to 4 hours
Drain water from the rice and grind along with coconut and cardamom using around 1/2 Cup water to a smooth paste..
Note: This batter should be on the thinner side.. {slightly thinner than dosabatter
Melt Jaggery in 1/4 Cup Water on medium flame in a non stick pan/ thick bottomed pan
Add the rice-coconut batter using left hand and with right hand, keep mixing continuously using spatula till the mixture leaves the sides of the pan and forms a mass..
Note: Mixing should be done swiftly to prevent lumps
Now remove the mixture onto a greased {with butter/ghee} plate..
Spread evenly using a spatula or clean fingers
When warm, cut into desired shapes.. Allow it to come to room temperature.
