Udidu, Maida Nanchana Polo and Mango Chutney - Sabitha Shenoy

Method:
  • Polo: one cup udid to be soaked and ground into smooth paste. Ferment overnight. Minced ginger and green chillies optional.Mix one cup maida and one cup ragi flour in water and keep in the fridge. Next day decant the water from the top and mix with the fermented udida peet. 
  • Add salt and make dosas. 
  • Chutney: grind coconut scrappings, tender mango bits, ginger and green chillies. Tadka: oil, mustard, curry leaves and jeera.
