Tomato Amti

Tomato Amti - Vidya Nayak Shenoy


Ingredients :-

4 big ripe tomatoes
1 1/2 tsp. suger, 1 boil onion,
1/4 tsp. asfoetida,
1/4 tsp. turmeric,
1/4 tsp. chilly powder,
1 1/4 tsp. salt,
4 black pepper,
1/4 tsp. cumin seeds,
1/2 fresh coconut , 4 tsp.besan,
1 teaspoon good ghee.

Method :-

Take out thin and thick milk of the coconut and keep aside. Coresely pound black pepper and cumin seeds.
Chop the onions and tomatoes. Take a big stainless steal dekchi and pour 2 cups of water.
Add chopped onions, tomatoes, pounded ingredients, asfoetida, chilly and turmeric powders along with salt.
Let this mixture simmer on low fire till it is well cooked.
Strain the contents of this dekchi through a coarse stainer in another dekchi.
Mix in besan in the thin milk and add water to the strained Amti.
Boil it for five minuites in which time besan will curled.
Add sugar and the good ghee if available and remove from fire.
