Recipe:
Rice-1 cup, chopped yellow cucumber-1 cup, puffed/flattened rice-1 cup, grated coconut-1/4 cp, turmeric-a pinch, jaggery-as required.
Remove the peel & seed of the yellow cucumber & chop it, soak rice fr 1-2 hrs, & flattened rice fr 2-3 minutes, grind soaked rice, flattened rice, chopped cucumber, grated coconut. Add required amount of water while grinding. Consistency of the batter should be thick compared to other dosa batter. a
Add salt, turmeric powder,and crushed jaggery. Keep this batter 8-9 hours in a warm place for fermentation. After fermentation, heat tava on a medium flame, pour a ladle full of batter on pan, "DONT SPREAD THE BATTER UNLIKE OTHER DOSA" close d lid. once it is fully cooked tiny pores can be seen. Surnali is ready to serve with butter. One should add jaggery more enough to make the batter very sweet..once after boiling pancake doesnt taste as sweet as the batter. So can add more jaggery.
