Soya vepudu - Anitha Shenoy
Ingredients:
For the Marinade
Chicken - 1 kg or soya nuggets 1 pkt
Ginger Garlic paste - 1 tsp
Turmeric powder a pinch
Salt to taste
Red Chili powder - 1 tsp
Garam Masala - 3/4 tsp
For Saute
Green chilies, finely chopped - 2 -3 medium
Onions - 3 medium
Oil - 2 tsp
Coriander leaves for garnish
For the Spice powder
Clove - 2 -3 nos
Cinnamon - 1"
Poppy Seeds - 1 tsp
Dry roast all the spices and grind to a powder.
How to make the Fry
Wash and cut the chicken/nuggets pieces into bite size. In a bowl, take the chicken/nuggets and all the ingredients listed under marinade, mix well and let it marinate for 6 hours or overnight.
When you want to make the fry, heat a kadai with oil.Add finely chopped onions, green chilies. Saute till the onions turn colour.
Then add the chicken/nuggets along with the marinade and cover with a lid. Cook in sim for 30 mins.
You can stir in between couple of times.
Once the water is all evaporated, add the ground spice powder and mix well.
Cook till the chicken/nuggets is well coated and is dry.
